Vanilla-Mocha Twirls

These cookies are so delicious and easy to pull off. Their look is interesting and kinda rustic (definitely my thing!) and given they require little ingredients it would be sin not to give them a try :-). Served with coffee or hot chocolate they will be a perfect treat for your family and friends. I had the oven hot from the lunch I prepared today and I quickly came to the conclusion that making some cookies for my hubby’s morning coffee would be a good idea.  I always keep butter in my kitchen, it makes everything so much better and tastier. Recently I read a study which rehabilitated butter as a fat that is not so evil as previously claimed. Like with everything else moderation is key. So I couldn’t be happier as I definitely love using butter in my kitchen and splurge from time to time.

The ingredients below make about 20 cookies.

150 g unsalted butter at room temperature

1 cup sugar ( I used the small glass cups used for serving pudding)

1 egg

1 package vanilla sugar

3 cups all purpose flour

2 tablespoons unsweetened cocoa powder

2 tablespoons instant coffee

3 tablespoons boiling water

Preheat your oven to 180 C.  Beat the butter, sugar and vanilla sugar until smooth and creamy. Ad the egg and beat until well combined.  Sift the flour and add in two batches. Form a soft dough and divide into two pieces. In a small bowl mix the cacao, instant coffee and water and add to one of the doughs. Knead the dough a bit so the cacao/coffee mixture is fully incorporated.

Divide each dough into 5 pieces.

Roll each dough into sausage-like pieces and then twist one mocha with one vanilla piece. The dough will become softer from the warmth of your hands and will crack a bit. Do not worry, just press and patch with your hands to form the twirls. I made them onto the baking sheet as it was easier to form and cut the twirls.

Cut the twirls into the desired length and bake for 15-20 minute. Mine took exactly 22 minutes to get ready and be perfectly crispy.  Since everybody’s oven is different you need to pay attention to the edges- when you notice a first very slight hint of golden-brown at the edges, take the cookies out of the oven. If you however prefer flaky cookies take them out at the 15th  minute. Cool before serving.
