Chicken bites with a twist


A couple of days ago while clicking randomly on some youtube videos I discovered a fabulous travel/cooking show- The BBC “Two greedy Italians”. I was mesmerized! Joining these two talented cooks- Gennaro Contaldo and Antonio Carluccio-throughout their Italian journey I was devouring with them all the gorgeous pasta, cheese, tender beef, pancetta, creamy desserts and wine…well only in my imagination of course :-). I wonder why on earth I didn’t get to know these greedy Italians earlier…they are my kind of chaps! Cooking and devouring gorgeous flavourful food!  And the pleasure wouldn’t have been complete without trying to recreate some of the yummy recipes.

Gennaro gave me an idea for the chicken breasts I had, for which I had come up with a mundane recipe earlier. These chicken bites will have you and your guests begging for more! They can be both finger food or main course if you decide to make more of them. The original recipe calls for pancetta ( but it was difficult for me to find it here in Kosovo so I substituted with thinly sliced beef jerky.


500 g chicken breasts

150 beef jerky

3 tablespoons olive oil

Lemon juice

salt, red and black pepper to taste

Cut the chicken breasts lengthways in half and then each half into 3-4 chunky bites. I deviated a bit by marinating the bites for 1/2 hour in olive oil, a little lemon juice, salt, black and hot red pepper. Take care with the salt because the beef  is quite salty. Wrap the beef jerky around the chicken bites and fix with toothpicks in order to keep it together.


Heat the olive oil in a large non-stick pan over medium heat and add the chicken bites. Turn them as they seal on each side and then reduce the heat. The heat is reduced in order to prevent the beef jerky from burning. Keep turning the bites for about 10-12 minutes until the chicken has cooked through. Upon removing from the pan put the chicken bites on kitchen towel to absorb the excess oil.

Serve with your preferred side dish or salad.
