An all-American classic-oatmeal cookies


So this is it, my first post in my newly created blog. And  why not start with a simple yet very delicious treat, which is a perfect company for your afternoon cup of coffee. These cookies are soft and chewy and their rich vanilla and cinnamon flavour is addicting. So here is what you need:

A cup of butter at room temperature. I used salted butter

200 grams brown sugar

3 eggs

1 tea spoon vanilla extract

2 cups of whole wheat flour

Half a cup of all-purpose flour

1 spoon ground cinnamon

3 cups old-fashioned oats. I used oats combined with raisin, dried bananas and coconut flakes.

1 packet of baking powder

In a bowl beat with mixer the butter and sugar until creamy and smooth (about 2 – 3 minutes). Add the eggs and vanilla extract and beat again until combined. In a separate bowl, whisk together the flours, the baking powder, and the cinnamon. Add this to the butter mixture and beat until incorporated.  With a spatula stir in the oats and mix well.

You can form the cookies with an ice cream scoop and space them in a baking sheet covered with parchment paper. Bake for 20-25  minutes  in an oven preheated to 180 °C until golden brown.
